Roasted pineapple with crumble

Ingredients :

  • 1 tin of pineapple in syrup
  • 1 teaspoon of grated ginger
  • 20g of dark chocolate
  • 40g of hazelnuts
  • 30g of butter
  • 4 shortbread biscuits
  • 2 teaspoons of soft brown sugar
  • Fresh mint

 

Preparation

  1. Pour the pineapple syrup into a pan placed on the griddle. Add the ginger and reduce for 3 minutes.
  2. Crush together the hazelnuts, the chocolate, the biscuits and the sugar.
  3. Rub this in with the butter to obtain a crumbly mixture.
  4. Put the sliced pineapple into the pan to soak up some syrup then griddle each side for 2 minutes, basting with the remaining syrup.
  5. Next to this, add the crumble mixture onto the griddle and cook for 1 minute turning over with a spatula.
  6. Serve on a plate with a few mint leaves.
