Rib of beef with onion chutney

Ingredients
- 1 rib of beef of about 1kg
- 2 onions
- 30g of slightly salted butter
- 2 tablespoons of sherry vinegar
- 15cl of water
- 1 teaspoon of granulated sugar
- 2 bay leaves
- Salt and pepper
Preparation
- Preheat the griddle to a medium temperature.
- Finely chop the onions and fry them in butter in a heavy-bottomed pan on the griddle for 10 minutes. Add the vinegar, the sugar, the bay leaves and the water, and continue to reduce the liquid for 15 minutes.
Put to one side. - Turn the griddle up to full temperature. Cook the rib of beef for about 10 minutes each side, depending on the thickness and personal preference.
- Season with salt and pepper, once its cooked, leave it for 10 minutes before slicing.
