Veal saltimbocca

Ingredients

  • 4 veal cutlets
  • 4 slices of Parma ham
  • 4 anchovies
  • 50g of grated parmesan
  • 2 zucchini
  • 2 teaspoons of mixed herbs
  • 4 tablespoons of olive oil
  • 10cl of white wine
  • Salt and pepper

 

Preparation

  1. Place a slice of ham, the parmesan and one anchovy onto each of the cutlets.
  2. Season with salt and pepper then sprinkle with mixed herbs.
  3. Roll up each of the cutlets and tie them with string to hold them in place.
  4. Place them into a frying pan with 2 tablespoons of oil. Cook until golden then pour over the white wine, allow to cook for 10 minutes.
  5. Thinly slice the zucchini into ribbons.
  6. Rapidly fry them in 2 tablespoons of oil.
  7. Serve immediately with a sprinkle of parmesan.
