Griddled vegetables

Ingredients :

  • 2 red peppers
  • 2 tomatoes
  • 1 fennel
  • 1 courgette
  • 1 onion
  • Olive oil
  • Mixed herbs
  • Salt and pepper

 

Preparation :

  1. Preheat the griddle on a medium heat.
  2. For the vegetables; halve the tomatoes, slice the onions and the courgettes to about 1cm thick.
    Divide the peppers into 8 quarters, remove the hard root part from the fennel before slicing into strips.
    Season the vegetables with salt and pepper as well as a sprinkle of mixed herbs, then drizzle over some olive oil.
  3. Cook on the griddle turning often; peppers for about 11 minutes, the fennel must be covered for about 8 minutes, the courgettes about 7 minutes, the onions about 4 minutes, and 3 minutes for the tomatoes.
