Griddled vegetables

Ingredients :
- 2 red peppers
- 2 tomatoes
- 1 fennel
- 1 courgette
- 1 onion
- Olive oil
- Mixed herbs
- Salt and pepper
Preparation :
- Preheat the griddle on a medium heat.
- For the vegetables; halve the tomatoes, slice the onions and the courgettes to about 1cm thick.
Divide the peppers into 8 quarters, remove the hard root part from the fennel before slicing into strips.
Season the vegetables with salt and pepper as well as a sprinkle of mixed herbs, then drizzle over some olive oil. - Cook on the griddle turning often; peppers for about 11 minutes, the fennel must be covered for about 8 minutes, the courgettes about 7 minutes, the onions about 4 minutes, and 3 minutes for the tomatoes.
